Private Country Club seeks a creative and very experienced Executive Sous Chef to serve as second in command of the culinary operation. Must have strong ala carte experience working all stations and have the ability to train new and current staff. You will work an average of 50-55 hours per week. The successful chef will be highly detailed and extremely organized. The Sous Chef is responsible for the daily planning, prepping and setup while ensuring quality food production for all menu items. They will maintain organization, cleanliness and sanitation of work areas and equipment. They must ensure that staff attends daily line-ups and that standards and procedures are followed at all times. Position Summary: - Responsible for the daily production of all food services for ala carte and banquets. - Writes creative and flexible menus for member dining, private events and member events. - Ensures that all food served is of the highest quality by touching and tasting. Essential Duties and Responsibilities: Ensure preparation, plating, and presentation standards are maintained, the appropriate quantity of food is prepared, and safety standards and regulations are followed to provide top-quality food. Supervise kitchen associates as well as train, develop, empower, coach, resolve and fix problems, and provide open communication. Seek the EC to use as a guide on any and all issues needed. Monitor and control the maintenance and sanitation of the kitchen and equipment to ensure a healthy and safe work environment that meets and exceeds federal, state, corporate, and franchise standards and regulations. Performs any other duties required or requested by the EC. Perform special projects and other responsibilities as assigned. Keys to Success Maintaining the 5-star quality of food preparation and presentation through active participation in all functions from planning to plating Supervises/set up and organization of work area with all necessary supplies and equipment Oversees/receives, inspects, and rotates all food products to ensure that only fresh, high-quality ingredients are used Supervises preparations and storage of raw food products prior to final assembly of hot food items Ensures that all standardized recipes are followed in the preparation and assembly of cold menu items Communicates daily with the EC and Catering Manager to obtain/provide current information regarding daily activities/functions and upcoming events Supportive and Responsible Promotes and applies teamwork skills at all times Notifies appropriate individuals promptly and fully of all problems and/or unusual matters of significance Is polite, friendly, and helpful to all members, guests, management, vendors, and fellow employees Attends all appropriate meetings and training sessions
