Description:
Brief Job Description: Handles food preparation for large all banquet events, that include breakfasts, lunches, dinners, and special events. After receiving each week's BEO, responsible for executing assigned production lists. Perform cooking, carving and/or other buffet duties as required. Stock and maintain designated food station(s). Operates food production equipment according to manufacturer's instructions. Carefully follows standard recipes for consistency, while preparing assigned items for banquet service. Assists in plating food items for service. Handles leftover food items as instructed by management. Make sure all food items are wrapped, dated, labeled, and stored properly. Keeps walk-ins clean and organized. Cleans assigned work area and kitchen. Assist dishwashers as needed. Performs other duties as assigned. Candidate Qualifications: Must have strong experience in a fine dining kitchen, ideally a catering kitchen. Proficiency in the following cooking techniques: charbroiling, poaching, deep frying, sauté, braising, roasting and par-cooking. Knowledge of herbs and spices and proper use of each. Ability to follow a recipe and provide consistency in the final product. Knife skills. Understanding of food safety practices and hygiene. Willing to work a flexible schedule including nights, weekends, and holidays. Must be detail oriented, extremely organized, and great at time management. Reliable, responsible and a team player. Ability to communicate and understand the directions of management. Organization Customer Service Work well under pressure. Ability to stand, walk, reach with arms and hands, climb or balance and to stoop, kneel, crouch or crawl.
