Overview Cimpl's, LLC , an American Foods Group Company has opportunities for a Quality Assurance Sorter at our Cimpl's plant in Yankton, SD. Summary This role will conduct carcass and carcass part sorting activities and identify any condemnable conditions or defects before carcasses and their parts are presented to online inspectors. The focus will be to separate carcasses, parts and viscera that are unwholesome and unfit for human food from those that are fit for human food. The ideal candidate will have hands-on knowledge, training and/or experience in basic microbiology, basic chemistry, sanitation, and HACCP. * Observe, palpate, and incise carcass and carcass parts to determine if abnormalities exist * Perform preparation (e.g., cuts) and presentation activities. * Follow FSIS regulations and company procedures (e.g., heads, tongues, viscera, carcass). * Notify the proper person if you identify, while conducting sorting activities, an animal or carcass you suspect has a reportable or foreign animal disease. * Attend training at hire and annual refresher training as needed. * NOTE: This description is not intended to be all-inclusive. Qualifications Minimum Qualifications (Required): * Must be 18 years of age or older. * Must be able to work in the United States without sponsorship. * Diploma or GED. * Demonstrated knowledge of food safety and quality. * Must be able to work in a variety of work temperatures warm, hot, humid, cold, wet or with slippery surfaces at varied heights in and around moving equipment and parts with the use of personal protective equipment (PPE). * Must be able to successfully complete training: * Safety Quality Foods (SQF) * Good Manufacturing Practices (GMPs) * Standard Operating Procedures (SOPs) * Sanitation Standard Operating Procedures (SSOPs) * Hazard Analysis and Critical Control Points (HACCP) * Straight knife * Steel * Hook * Food defense Preferred Qualifications: * Knife experience. Knowledge, Skills, and Abilities: * Must be able to work in a fast paced environment. * Strong attention to detail and observational skills. * Knowledge of beef anatomy to recognize common parts of the beef carcass, skeleton, and digestive tract.
