Purpose of the Executive Chef: The Executive Chef is responsible for training and managing kitchen personnel, and supervising/coordinating all related culinary activities. Essential Duties and Responsibilities Oversees kitchen staff. Oversees and carries out staff training. Estimates food consumption and requisition to purchase food and maintain proper inventory. Oversees vendor ordering. Works with Executive Chef on menu development. Standardize production recipes to ensure consistent quality. Establish presentation technique and quality standards. Plan and price menu items. Ensure proper equipment operation/maintenance. Ensure proper safety and sanitation in the kitchen. Cook selected items for select occasions. Oversee special catering events and may also offer culinary instruction and/or demonstrate culinary techniques. Directly supervises kitchen personnel with responsibility for hiring, discipline, scheduling, payroll, performance reviews and initiating pay increases. Works closely and maintains communication with FOH and the Director of F&B. Other duties as assigned Skills/Requirements Previous management or supervisory experience preferred. Bachelor's Degree or related culinary degree with 5 or more years of industry and culinary management experience preferred. Previous experience with control food and labor cost. Ability to demonstrate cooking, menu development and pricing, and development of culinary team. Proficiency with computers and Microsoft Office Suite including Excel, Word and Outlook. Ability to establish and maintain effective working relationships as well as to gain the cooperation of guests and fellow team members This position must have, or an ability to acquire within one year, an in-depth knowledge and thorough understanding of company policy and procedures, state regulations, and technical rules relevant to their responsibilities Must possess the ability to obtain a Minnesota Racing Commission gaming license Physical, intellectual and environmental conditions: Ability to work flexible shifts and days of the week including nights, weekends and holidays Excellent customer service skills. Able to work with and lead a team of up to 40 employees. Strong multitasking skills. Ability to handle frequent walking, standing, kneeling, crouching, twisting, bending and lifting, pushing and pulling. This is a very active position. Ability to lift up to 50lbs on occasion.
