This job is in the Harvest Hide On section. Must be able to work in a warm/damp environment. The job requires that you open the hide to remove it off the leg. Knife experience or the ability and willingness to learn all methods of cutting and keeping your tool sharpened. For food safety purposes This job will rotate knives after each carcass is processed. Must be able to maintain a safe and clean work environment. Must always wear all PPEs. Must be able to stand in an elevated work platform between 9-10 hours a day.
