The Rackhouse Tavern located in the historic Campbell House Lexington - Curio Collection by Hilton is seeking an experienced Restaurant Manager to lead our Rackhouse Tavern team! You must be a motivator and passionate about providing service excellence to others. The Rackhouse Tavern is a Lexington favorite located within our hotel and serves a fusion of traditional and innovative dishes inspired by regional ingredients and local heritage. As a proud member of the Kentucky Bourbon Trail, we feature an amazing selection of over 300 bourbons and local brews on tap. Purpose for the Position: To manage the entire front of house service operation of the Restaurant maintaining established service and quality standards to ensure outstanding guests service and maximize profits. Essential Responsibilities Maintain service and product quality standards by conducting ongoing evaluations of the operation. Recruit, hire and train qualified individuals for positions within the department. Perform daily training with staff of each discipline. Maintain a qualified and sufficient work force for all food & beverage service areas of the hotel. Perform team member coaching and discipline when required. Ensure proper orientation and training of all new team members. Establish and maintain a pro-active human resource function to ensure associate motivation, training and development, wage / benefit administration and compliance with established labor regulations. Assist in the annual budgeting process of the department. Implement and maintain sales and marketing programs. Implements and maintains effective two-way communication systems which reach all department associates. Develops new programs which result in an increased level of customer satisfaction and operational excellence. SUPPORTIVE FUNCTIONS: In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the hotel. Attends meetings such as menu meeting. Orders supplies and linens for functions from Purchasing and Housekeeping departments. Separates, posts and distributes event order sheets. Assists servers and captains with the execution of events according to the event order and Hilton quality standards. Performs other duties and responsibilities as requested. SPECIFIC JOB KNOWLEDGE, SKILL AND ABILITY: The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of skills and abilities. Must have comprehensive knowledge of food and beverage preparations, service standards, guest relations and etiquette. Knowledge of all applicable federal state and local health and safety regulations. Knowledge of the appropriate table settings and serviceware. Comprehensive knowledge of the English language in order to read event orders and effectively communicate with guests and team members. Basic mathematical skills. Ability to stand, walk, and or sit continuously to perform essential job functions. Ability to grasp, lift, carry or transport up to 40 pounds. Ability to operate various food and beverage equipment present in a function. Ability to set realistic goals and standards. Ability to learn and perform all essential job functions accurately and safely with minimal direct supervision, within the initial training period after the team member begins work Education/Experience: Educational skills-high school diploma Job experience-2 year minimum Restaurant Management experience
