The Sous Chef supports the Head Chef in managing all aspects of the kitchen. The Sous Chef ensures quality standards are consistently met in the areas of food production, team management and guest experience. Functionally reports to the Head Chef and manages a team of line cooks, pizza cooks, prep cooks, bakers, and dishwashers. Job Responsibilities will consist of (but are not limited to): Collaborate closely with the Head Chef and Restaurant Partners to plan and execute seasonal menus Assume responsibility for daily operations of the kitchen Maintain a professional team-oriented staff: assist with BOH employee hiring, assignment, training, payroll, scheduling, evaluations and terminations with company standards Review financial information such as sales, costs and labor, to ensure adherence to budgets Manage inventory: estimates needs, places orders, receives and checks deliveries Inform front of house personnel of menu changes, specials and shortages Document, investigate, escalate and resolve employee or guest incidents Ensure all health and safety codes, and company safety and security policy are consistently met Identify areas of improvement for BOH systems and work with Head Chef to implement long-term solutions Work collaboratively as part of a management team interested in both company-wide and personal growth Perform other duties as required or assigned Physical Requirements: Must be able to stand/walk for 9 to 10+ hours; bend, push, pull; lift up to 50lbs Frequently stands, walks, talks and hears, taste or smell; uses hands, reaches with hands and arms; occasionally sits, climbs, balances, stoops, kneels, crawls, crouches Occasionally works in extreme heat, wet or humid conditions Noise level is moderate Qualifications and Competencies: 5+ years of chef experience, including 2+ years of management experience Must tolerate pressure and work calmly and efficiently during busy times Must have a positive attitude and an outgoing personality that fits in with our team Must show enthusiasm for the job and for Alternate Ending Must be considerate, patient and willing to help out fellow employees Must have excellent communication and leadership skills; Ability to teach and train others Must have strong organizational and time management skills, along with impeccable attention to detail Must have experience with inventory control and controlled food and labor costs, with a strong knowledge of restaurant financials Must be available to work onsite with a flexible schedule including evenings, weekends and holidays Must be able to use commercial kitchen equipment including mixers, ovens, fryers, torches, etc. Must have computer knowledge (Excel, Google Docs, Windows, etc.) Must have firm understanding of kitchen sanitation practices and health department standards Must be passionate and understanding of the current local food scene Certificates/Licenses: ServSafe Lines of Communication: This position reports to the Head Chef
