The Prep Cook assists the cooks in the preparation and service of menu items and performs a number of kitchen activities including pot washing, dish washing, general cleaning duties and storing food and non-food supplies. General Responsibilities Assist cooks in preparation and service of various foods in assigned work situations including line items, salads, soups and sauces. With pre-preparation of ingredients for all menu items and in accordance with all local health regulations. Store and properly handle raw or prepared foods and non-food supplies. Wash dishes and pots. Operate dish washing equipment. Distribute and store clean pots, dishes and utensils. Clean and sanitize production equipment, work surfaces and kitchen according to cleaning schedules and procedures. Empty trash containers as required. Maintain assigned work station in a safe and sanitary condition. Handle food in a manner that is consistent with local health department guidelines. Follow proper food handling techniques and coordinates the use of time, material and equipment to avoid waste and unnecessary expense. Maintain acceptable standards of personal hygiene. Comply with department's dress code. Follow safety regulations, reporting injuries or any unsafe conditions and work practices to the supervisor. Put freight away and keep all kitchen areas (dry storage racks, walk-in, freezer) organized. Job Qualifications Experience/ Knowledge: Basic understanding of professional cooking and knife handling skills. Understanding and knowledge of safety, sanitation and food handling procedures. Previous prep or line cook experience. Skills/Aptitudes: Professional communication skills are required. Regular, predictable and dependable attendance. Ability to work in a team environment. Ability to work calmly and effectively under pressure. Commitment to quality service, and food and beverage knowledge. License/Qualifications: Food Handlers permit required. Must be able to speak, read and understand basic cooking directions in English or Spanish. FLSA Information Management Activities: None Discretion/Independent Judgment: As a Prep Cook, you will be expected to work with Associates to ensure satisfaction. ADA Information Physical Requirements: Ability to speak and hear Close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus. Constant standing with some walking Be able to work in a standing position for long periods of time (up to 8 hours). Be able to reach, bend, stoop and frequently lift up to 35 pounds and occasionally lift/move 50 pounds. Continual use of manual dexterity and gross motor skills with frequent use of bi-manual dexterity and fine motor skills Working Conditions: Exposure to blood borne pathogens. Working conditions involve, noise, heat, changes in temperature, kitchen elements, odors, moisture, etc. May be required to work additional hours as dictated by the work load and staffing Must be willing to work holidays, weekends and evenings if needed. The noise level in the work environment is usually moderate to loud.
