*APPLICANT CLOSING DATE: Until Filled* STATUS: Full-Time or Part-Time FLSA: Non-Exempt REPORTS TO: Sous Chef SUPERVISES: N/A DEPARTMENT: Food & Beverage AGE REQUIREMENT: 18 Years Or Older WORKING HOURS: This is an hourly position. The incumbent is expected to work the necessary hours to meet the needs of a 24 hour establishment. SUMMARY: To lead in the daily production and/or cooking of all foods relating to the respective kitchen outlet. ESSENTIAL DUTIES AND RESPONSIBILITIES : Prepares and cooks foods for respective kitchen outlets including TDR according to proper procedures. Provides guidance and support to all kitchen personnel. Follows all applicable safety and maintenance procedures and meets set quality standards. Prepares all specialty sauces, stocks, soups and entrees. Spot checks food preparations procedures for quality and accuracy according to the recipe standards. Directs and instructs cooks, prep cooks, and kitchen stewards. Stores, labels, dates and rotates all foods (FIFO). Assists in completing hot and cold line functions as necessary. Follows safe food handling procedures at all times. Works at a safe and efficient rate of speed in a fast paced environment. Cleans and organizes workstation or stations and surrounding areas as necessary. Uses kitchen equipment as instructed to insure safety and proper care of equipment. Reviews delivered goods and stocks them in the proper locations. Ensures entire kitchen is clean and organized at all times. Acts as a role model and always present oneself as a credit to River Rock Casino and encourages others to do the same. Meets the attendance guidelines of the job and adheres to regulatory, department and company policies and procedures. Attends all required meetings and training. Maintains confidentiality at all times. Performs other duties as assigned. QUALIFICATIONS: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and ability required. Minimum of three (3) years line cooking experience required. Possess excellent knife skills and be able to operate basic kitchen equipment. Must have leadership qualities; ability to cross train other team members. Must be able to work independently with minimal supervision. Must be able to get along with co-workers and work as a team. Must present a professional appearance and in uniform at all times. Must be able to maintain a high degree of confidentiality with respect to all matters pertaining to the gaming enterprise business. Must be able to pass a comprehensive sanitation and job skills exam. Must be able to work completely in all stations of more than one food outlet. EDUCATION: High School Diploma or equivalent GED preferred. LANGUAGE SKILLS: Bilingual skills preferred. Excellent communication skills are important to the successful conduct of this position. Must be able to speak with the public in a professional manner. MATHEMATICAL SKILLS: Ability to add, subtract, multiply, and divide in all units of measure as related to the position. REASONING ABILITY: Ability to proactively streamline processes for company's return on investment. Ability to define problems, collect data, establish facts, and draw valid conclusions. Ability to interpret an extensive variety of instructions furnished in written, oral, diagram or schedule form. Ability to process detailed work and requests for information or assistance in a timely manner. Ability to apply regulatory and procedure doctrine, concepts, and policy to practical situations. PHYSICAL DEMANDS: Must be able to be on feet for prolonged periods of time and work efficiently in an environment with extreme temperatures (hot/cold); Must possess coordination and dexterity to use kitchen utensils such as knives, spatulas, food tongs, etc. Must be able to operate the following kitchen equipment: stoves, grills, fryers, and other utensils when preparing food orders. Must be able to lift a minimum of fifty (50) pounds. Must be able to carry, pull and push the weight needed to perform the duties of the job. Must be able to sit and/or stand for extended periods of time. Must be able to respond to visual and aural cues. WORK ENVIRONMENT: The work environment characteristics described here are representative of those an employee encounters while performing the essential functions of this job. This is a fast paced, highly diverse work environment, and the position requires the ability to remain flexible and get along with all personality types. Must be able to manage a number of priorities simultaneously and meet deadlines. Must be able to respond calmly to customer concerns and questions.
