SUMMARY Italian Family-owned Restaurant Group based in Miami with three existing location and rapidly expanding is hiring a Corporate Sous Chef to oversee the day-to day operations and report directly to the ownership. Energetic professional and positive Leader, SOP & top-line focused, organized, proven record of excelling in expanding markets. Financial Acumen required. Passion for training & development is crucial. Taking also into strong consideration a seasoned Executive Chef ready for next step in their career. Growth potential. Previous Sales Volume experience must be at a minimum of $9MM Yr. +, Required. Estimated Salary $100K + Lucrative Bonus program. Corporate Sous Chef is directly responsible for implementing and following the culinary standards and overseeing the culinary operations of the units. The Corporate Sous Chef is responsible for supervising all kitchen functions including food purchasing, preparation, and maintenance of quality standards, sanitation, and cleanliness and DOH Standards. The Corporate Sous Chef assists the Chef/Owner in achieving their EBITDA goals in terms of COGS and BOH Payroll. ESSENTIAL DUTIES AND RESPONSIBILITIES Step in acting Chef in any position necessary Serves as a liaison between operations and the executive team. Manage day-to-day kitchen operations and culinary team: food execution, quality, technique, and training. Track food costs while managing vendors to provide standard cost-efficient products. Estimate food consumption and requisition of food purchase. Creation of onboarding training manuals and BOH employee certification system. Achievement of budgeted food sales, labor costs, and profitability. Timely analysis of Food & Beverage Prices in relation to competition achieving service that exceeds expectations. Innovation of new product and program development. Help Minimize number of guest complaints as it pertains to food quality. Personal development and growth. Discipline of personnel when required. SKILLS AND QUALIFICATIONS Proficiency in Microsoft Office, Office365 or similar Exceptional people management knowledge Exceptional culinary skills Strong project management skills Knowledge of Italian food - No negotiable Skills / Abilities / Presence Positive attitude Excellent verbal and written communication Ability to function well as part of a team. Able to multi-task and work in a fast-paced environment Strong customer service orientation. Able to communicate effectively with customers and coworkers.
