Job Title: FOUNDRY GRILL ASSISTANT RESTAURANT MANAGER Department: Food and Beverage Reports To: Foundry Grill Restaurant Manager Rate of Pay: DOE Shift: Variable shifts including evenings, weekends, holidays and special events. Must be available 7 days/week SUMMARY Assist in all aspects of service operations in Foundry Grill working collaboratively with Culinary Leadership to execute the desired experience for each guest. Contribute to a positive work environment encompassing the values of the Resort. Assist in leading a professional service team in providing exceptional service to our guests. Oversee and lead service team in daily training, monitoring, and improving current standard operating procedures. ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned. Leadership Assist with the overall vision and business plan for the Foundry Grill. Work with the Restaurant Manager and marketing team in collateral to enhance sales on property and the local community. Possess exceptional understanding of fine dining and Forbes service standards. Exhibit exceptional job and product knowledge to provide staff and guests with accurate information in all aspects of food, wine, service, and resort information. Personally, greet and/or seat 80% Foundry Grill guests daily. Supervisor's floor presence expected during peak times to achieve specified percentages. Take ownership with the Restaurant Manager of all aspects of restaurant operations and service standards during shift. In addition, provide insights to increasing efficiencies and maintaining service standards in the restaurants. Ensure all team members consistently perform all steps of the service standards in the Foundry Grill and score above 90% on our annual Forbes inspection. Train staff to support the recycling program and share the Sundance story of land preservation and environmental commitment as the opportunity arises, and ensure best practices are used in and around dish area to reduce fats and oils. Service Standards Conduct and track daily training in the Foundry Grill. Ensure that dining spaces are clean, always organized, and in proper working order. Ensure completion and effectiveness of side work and cleaning schedules. Evaluate current standards, procedures and job descriptions; update and/or create standards and procedures elevating levels of service and performance within the department. Assist in creating schedules and hiring staff for the Foundry Grill. Ensure that the Foundry Grill are properly staffed, that shifts are covered according to business demands and the staff is properly trained. Assist in overseeing the set-up, confirmation and organization of restaurant reservations - assist in creating databases and customer profiles. Ensure compliance with UDABC and State Laws. Provide direction and training to ensure that staff, facilities and record keeping are compliant with state laws and regulations as prescribed by the UDABC/County/State laws, rules and regulations. Ensure compliance with health department standards to achieve an "A" grade on all inspections. Profitability Understand day to day actuals needed to achieve budget and labor goals for restaurant. Control costs, regulate sales and labor, and maintain profitability standards. Inventory supplies, and ensure restaurant supplies are stocked at adequate levels for service. Work closely with Culinary Leadership, F&B Director and Restaurant Manager on menus, food concepts, wine lists and guest feedback. SUPERVISORY RESPONSIBILITIES Assist the Restaurant Manager in managing Foundry Grill staff. (35-45 employees). Carry out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. Complete all applicable paperwork for the above responsibilities and submit to HR in a timely manner. DISCLAIMER This is a general description of this job. Quickly evaluate alternatives and decide on a plan of action. Think creatively. EDUCATION and/or EXPERIENCE Two years food service management experience in a full service restaurant. Expert knowledge of wine, liquors and beer. Prior experience with basic accounting and budgeting. TECHNICAL/COMPUTER SKILLS Computer efficiency in Windows, Word, WordPerfect, Excel, internet navigation, electronic mail, and point of sale system. Exhibit proficiency in reservation system. Properly communicate needs and problems to IT department in a timely manner. CERTIFICATIONS, LICENSES, REGISTRATIONS Must possess or obtain a valid food handler permit within 30 days of employment. Must possess or obtain a valid alcohol service permit within 30 days of employment. Must possess a valid U.S. Drivers' License in good standing as determined by Sundance's Insurance Company guidelines. OTHER QUALIFICATIONS Must be 21 years of age or older.
