JOB SUMMARY: Qualified candidate for Kitchen Coordinator plans, directs, or coordinates activities of kitchen staff in the Phoenix Café (back of the house). ESSENTIAL DUTIES & RESPONSIBILITIES: Qualified individual will objectively assist the Kitchen Manager with the day-to-day operations of the Phoenix Café and preparing weekly schedules to ensure proper staffing levels at all times. Qualified individual may assist in conducting interviews, coaching and appraisals and training all Phoenix Kitchen Staff. Investigates and resolves complaints regarding food quality, service or accommodation. Maintains and monitors all kitchen operating equipment such as slicers, mixers, grinders, cutters, steamers, broiler overs, griddles, deep fryers and braziers to ensure they are clean and fully operational. Promptly reports all damage to the Engineering department for immediate troubleshoot and repair. Establishes a routine for cleaning walls, shelves, sinks, drains and walk-ins. Reviews with the Kitchen Supervisors the daily food production to meet business demands. Has authorization to sign food requisitions. Prepares budgets and menus with approval of Executive Chef/Director of F&B. Ensures adherence to recipe and food preparation techniques. Monitors budget and payroll records to ensure that expenditures are authorized and budgeted. Assign duties, responsibilities, and work stations to employees in accordance with work requirements. Recommend measures for improving work procedures and worker performance to increase service quality and enhance job safety. Ensures proper and economical use of equipment, supplies and facility. Complies with all Health Department regulations and ensures that all cleaning schedules are maintained. Works as team member and maintains cultural sensitivity at all times. Maintains familiarity with Parkwest Bicycle Casino policies and procedures and other applicable regulations. Must be able to work overtime when necessary and available to work any given shift in a 24/7 industry. Additional duties may be assigned by the Director of F&B and Kitchen Manager. EDUCATION/EXPERIENCE: Associate degree in business preferred. High School diploma or General Education Diploma. Three - five (5) years of experience in supervising high volume Asian Cuisine operation and/or training; or equivalent combination of education and experience. Previous supervisory experience required. * Must have active California Food Handler Certificate/Card and Manager's Food Safety Certification as required by the Health Department. * Must have Active California (RBS) Responsible Beverage Service Alcohol Certificate/Card required for this position. ***MUST BE 21 YEARS OF AGE*** EEO/AA/Minority/Female/Disability/Veteran Employer #ZR Job Posted by ApplicantPro
