Restaurant Concept: Emmitt's Restaurant is a modern American eatery specializing in delectable steak and fish dishes located in Las Veg as. Proprietors Football Hall of Famer Emmitt Smith and Chef Rainer Schwarz and share a commitment to providing a comfortable and appealing eatery for friends and families to enjoy great food and libations. The menu featured succulent steaks and chops, such as 60 day dry-aged prime chops and Colorado Bison and A5 wagyu. Seafood items include Glacier 51 Seabass, Vietnamese Black tiger shrimp and the highest quality sashimi you can find on the Vegas strip. Emmitt's will take the concept of a classic modern bar to new heights featuring artisan and delicious handcrafted cocktails. With a wine list that focuses on California cult wines and other highly-rated, world class wines, the dining experience consists of a vibrant mix of stylish dining and lounge style settings with exceptional service. Job Summary: The person in this position is responsible for execution of the appetizer, salad station and other cold foods for the restaurant and grocery venues. He/She needs to be able to follow the standardized recipes and ensure that food quality; portioning and presentation reflect Emmitt's philosophy for fresh, healthful and innovative cuisine. Essential Duties and Responsibilities: Food Preparation and Quality Assurance: (90%) Prepare food according to standardized recipes and Emmitt's standards. Plate food in the most appealing and efficient way possible and in accordance to our plating guide. Knowledge of how to use kitchen equipment and tools. Assists other chefs with preparation of food for the restaurant, terrace and grocery venues. Health, Safety and Sanitation: (10%) Follow established health and safety standards. Store and rotate food items properly to ensure food safety. Keep your work area clean. Supervisory Responsibilities : None Job Requirements: Education/Experience : Two years of professional experience in Garde Manger in a known food service establishment. Skills : Good food preparation skills and able to follow recipes and instructions. Team player with a can-do attitude. Knowledge : Knowledge of fine Dinning Steakhouse as they relate to and are the inspiration of Emmitt's steakhouse Cuisine. Knowledge of kitchen equipment and its proper usage. Physical : Good taste, smell, hearing, vision and hand/eye coordination. Flexibility in cross training, job functions and responsibilities and willingness to work extended hours including evenings, weekends and holidays. Able to stand for long periods of time, to use various kitchen equipment. Able to lift and carry 40 lbs. Other Preferred Job Qualifications : Professional culinary training at an accredited school or in a known professional kitchen. Theme park and/or high volume operation experience. Foreign language skills (Spanish). Experience in the wine industry, specifically special events.
