Sous Chef - Full Time Masonic Villages at Sewickley is hiring a Sous Chef! This is a Full Time Day, Evening position that will include some weekends . Our Mission: At Masonic Villages of Pennsylvania , our mission is simple; it is a Mission of Love . Our caring communities and services assist individuals, families, and children in realizing their potential and enjoying the highest possible quality of life through the traditions of Freemasonry. What You'll Do: As a Sous Chef, you will carry out our Mission of Love by Directing and supervising activities of the food preparation for Clubhouse and Grill room Kitchens involving planning, ordering, storage, processing and serving. Our Sous Chef is responsible for the following: Works with the Executive Chef to implement policies, procedures, long and short term goals and methods of food production Prepares monthly small ware inventory. Procures small wares when needed Directs and participates in general cleaning throughout the kitchen, as required Checks deliveries for accuracy and freshness. Assigns cook staff daily production assignments and monitors to insure established recipes are followed Prepares and posts By-weekly Kitchen Staff schedule Instructs and reviews with staff the proper and safe uses of all kitchen equipment Trained in Clubhouse kitchen, Grill Room and Hearth Oven area operation. Will step in and assist when business demands dictate Monitors staff's performance to ensure temperature logs and safety procedures are being performed Must have working knowledge of Executive Chef's Position Specific responsibilities. Required to perform responsibilities in his absence What You Definitely Have: Experienced fine dining line and prep cook preferred. A Culinary graduate preferred. Strong knowledge of soups, sauces, and gravies and food production required.
