Formulates batch recipes according to product specifications while insuring the finished product meets all food safety and quality attributes. It is the responsibility of every employee at Tree Top Inc. to report food safety and food quality problems or risks to personnel with the authority to initiate action against these said possible risks. The Organization chart indicates key personnel with the authority to take action. This is a representative sample--not to imply a complete listing of all responsibilities and tasks. ESSENTIAL FUNCTIONS: Responsible for the efficient and correct preparation and documentation of the batch formulas Record production and test data for each food product batch, such as the ingredients used, temperature, test results, and time cycle Follow recipes to produce food products of specified flavor, texture, clarity, bouquet, or color Set up, operate, and tend equipment that cooks, mixes, blends, or processes ingredients in the manufacturing of food products, according to formulas or recipes Mix or blend ingredients, according to recipes, using a paddle or an agitator, or by controlling vats that heat and mix ingredients Select and measure or weigh ingredients, using English or metric measures and balance scales Turn valve controls to start equipment and to adjust operation to maintain product quality Press switches and turn knobs to start, adjust, and regulate equipment such as beaters, extruders, discharge pipes, and salt pumps Observe gauges and thermometers to determine if the mixing chamber temperature is within specified limits, and turn valves to control the temperature Observe and listen to equipment to detect possible malfunctions, such as leaks or plugging, and report malfunctions or undesirable tastes to supervisors Assemble and disassemble single strength bertocchi Run CIP in batching room and dryers Run CIP in Apple/Puree System Leads Drum Dryer Assistant and Drum Dryer Helpers Relieves Drum Dryer Helpers and Drum Dryer Assistant in rotational format for breaks and lunch Changes blades at start-up and mid-week if necessary Assist in the training of new drum dryer personnel Check metal detector according to SOP Ensure pipping connections are in place Ensure inline screens are in place Put on dryer shields, guards, lines, and covers on the dryer equipment In the packaging room, ensure that product is manifested properly and located in proper storage area. Monitor and maintain oil levels in automatic oiler Monitor dust collectors and make sure it is emptied, weighed and recorded according to the SOP Monitors and controls the appropriate raw material in the process Monitors and controls the process operating parameters which includes temperature and flow rates Adjust batch operating parameters to match incoming raw materials Maintains immaculate documentation of CCP's Demonstrates high degree of food safety practice Manages and ensures all processing charts are recording and functioning properly Complies with all established sanitation and safety policies and procedures Utilizes Quality/Assurance Department instrumentation such as a PH meter, temp probe and other product test equipment Accurately and legibly reports usage of raw material and packaging Responsible for sanitation of all equipment associated with the Drum Dryer line Follow all safety policy and procedures Reliable and Predictable Attendance Maintains area of responsibility to meet GMP standards All other duties as assigned or requested by supervisor Job Posted by ApplicantPro
