Position Purpose & Summary The Assistant F & B Manager is responsible for directing and administering the activities and services of In-Room Dining, Beach & Cable Coffee Shop, and Seasonal F & B Pools operations in the continuing effort to deliver outstanding member and guest service and financial profitability. The role requires working in a progressive management environment that focuses on providing a consistently high-quality food and beverage service delivery model as the utmost priority in all outlets. Responsible for managing labor, revenue, Club Members & Resort Guests positive experience, Team Member retention and for supporting company policies. Essential Functions: Ensure physical atmosphere and cleanliness of outlets, furnishings, and workstations. Provides a pleasant and efficient atmosphere for team members, members, and guests. Monitor food quality and service level. Ordering, organizing and inventory control of all products. Reads and responds to emails daily, attending Operations meetings weekly. Receives and resolves complaints concerning food, beverages, and service, using the glitch system and ensuring the team will use too. Conducts daily stand-up meetings before each shift, with motivational, interactive and energetic spirit, reminding team of preference pads usage; Chef to be invited to each pre-shift. Prepares and send out requested reports. Conduct safety training classes in conjunction with the safety committee on lifting, emergency procedures, proper knife handling, etc. Determine and forecast budget, food, labor and overhead costs and direct food apportionment policy to control costs. Review sales and Food and Beverage labor costs daily and resolve any discrepancies with Finance and Accounting. Keep a pulse on the budget in collaboration with the Restaurants General Manager, develop, recommend, and manage the outlets budget, business marketing plan, and forecasts, to meet or exceed Ownership expectations. Monitoring labor and revenue daily. Minimize waste and maintain controls to attain forecasted food and labor costs. Knows the food and beverage menus, prices, and policies on side dishes and substitutions. Ensure that voids and comps are with written explanation. Prepares team member schedules and publishes, displays them adequately before schedule is needed. Conducts daily walk-through inspections and enter the HotSos accordingly. Hires, trains, coaches, counsels, and disciplines staff members within guidelines. Maintain and update training manuals as needed. Consults with Restaurants General Manager and Human Resources on employment and termination decisions. Maintains the Menus and makes decisions with Executive Chef and Restaurants General Manager. Has a close working relationship with the Executive Chef and Culinary team. Implements improvements to operational systems and procedures. Ensuring that Equipment Inventories are done accurately and on timely manners, as per schedule Ensure that expectations and objectives are clearly communicated to team Interact with Club Members, Resort guests, Public guests, to solicit feedback and ensures guest satisfaction. Ability to work any assigned shift / work Respond to any reasonable task as assigned by the F & B Manager, GM of Restaurants, VP F & B , the President and CEO or the Sr VP of Operations Marginal Functions: Perform other duties as assigned. Interface positively with other departments, offering assistance when needed. Displays care in use of equipment and maintains an organized and professional work environment. Position Requirements: Minimum Knowledge & Skills: Knowledge of F & B operations, appropriate table settings and service ware, and proper wine and beverage service Knowledge of all applicable federal, state, and local health and safety procedures Ability to write routine reports and correspondence Ability to communicate effectively before groups of customers or team members Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. Ability to apply concepts of basic algebra Microsoft Office (Word, Excel, Outlook), Point of Sale (POS), inventory software, payroll systems, and order processing Formal Education and Job-Related Experience: High school diploma; Bachelor's degree preferred Minimum four (4) years' experience in the Food and Beverage Leadership, preferably with a club / resort background at a Four or Five-Star hotel or restaurant License, Registration, and/or Certification Required: Level One Sommelier desirable External and Internal Personal Contact Communications: Dail y - Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form Attend and conduct pre-shifts Weekly - Attend weekly staff meeting, F & B division meetings, conference review meetings, pre-conference meetings or as it is required Occasionally - Participate in one-on-one coaching sessions Teamwork and Collaboration: This position requires continuous teamwork as well as internal and cross-departmental communication Additional Licenses and/or Certifications Required YES NO Valid Driver's License X CPR Certification X Food Protection Manager Certification X Food Handler Certification X Alcohol Server/Seller Certification X Position Analysis/Specifications N/A (Not Applicable) OCCASIONAL FREQUENTLY Sitting X Standing X Walking X Bending Over X Crawling X Reaching X Crouching X Kneeling X Balancing X Pushing / Pulling X Lifting / Carrying: 10 lbs. or less X X 11 to 25 lbs.
