The Production Chef is a hands-on role, producing hot and cold foods. During the production process, the Production Chef ensures the highest level of food quality while maintaining catering standards of sanitation. This position reports to the Executive Chef. RESPONSIBILITIES Include the following, but are not limited to: Preps hot and cold food selections using standardized recipes. Cooks multiple hot and cold food - ensuring hot food is consistently served hot and cold food is consistently served cold. Receives and checks all incoming food and nonfood supplies. Stores all food and canned goods properly and neatly in the storeroom. Labels and dates all incoming stock. Rotates stock according to date. Maintains cleaning responsibilities of the kitchen, prep area, and dish room on a daily and weekly basis. Delegates these duties to other staff as needed and ensures completion. Maintains cleanliness and sanitation standards at all times (including glove usage and product rotation). Controls food cost by taking measures to control waste, additionally looks for cost-saving and labor-saving ideas. Preps dishes based on daily production sheets. Informs Executive Chef and/or Sous Chef when items need to be ordered or equipment needs servicing. Fills in where needed to ensure efficient operations. Ensures production areas are always neat and clean. Keeps all walk-ins clean and orderly - using up old inventory first. Verifies food produced for catered events and confirms completion. Trains and develops Dishwashers, Catering Associates, and temporary help in preparation, quality, and presentation. Learns the skills required to perform multiple functions of a catered event, to include but not limited to: running an efficient back-of-the-house, executing a proper dish-up line, grilling, and buffet serving. Sets-up, performs and trains staff in the following areas of off-premise catering: pasta, stir-fry, fajita, and carving. Maintains knowledge of kitchen policies and procedures. May act as Event Chef as business needs dictate. Produces and executes food tastings based according to business needs. Keeps busy during downtimes. REQUIREMENTS Demonstrated dependability. Solid organization skills - able to prioritize tasks and follow directions. Manage multiple tasks with minimal supervision. Accurate and attentive to details. Deadline driven. Good verbal interpersonal skills and ability to work with multiple personalities in confined space - teamwork is key. Valid driver's license and access to insured transportation (preferred but not mandatory). Continuous repetitive motion abilities - such as standing, reaching, bending, lifting, carrying, walking, and lifting during 90% of shift. (Regularly lift 20-30 pounds regularly throughout shift. With the assistance of another production associate, lift 45-60 pounds several times per day.) CORE COMPETENCIES High Regard for Success. Strong verbal and written communication skills to convey basic business procedures and to effectively respond to common questions from internal office associates.
