The Westin Richmond 4 Diamond hotel is looking for a dynamic Executive Chef to join our fantastic team! The ideal candidate will have a passion for culinary arts, a pro-active "can do" attitude and provide exceptional distinctive premium service to our guests. If you enjoy working in an elegant atmosphere, fast-paced environment as well as working in a team environment, this is the ideal job for you! ESSENTIAL FUNCTIONS Must have open availability Responsible for hiring, training, scheduling and directing all culinary and stewarding associates. Visually inspect all food product to be served to ensure they all meet the quality standards set out by departmental and hotel management Responsible for writing, maintaining and updating all menu specifications, recipes and pictures, and production forecast and ensure the same are being followed Responsible for daily assurance of cleanliness relative to all food and beverage areas including the kitchen, equipment, storage areas and loading dock Select, train and supervise kitchen and stewarding associates in the proper preparation of menu items, equipment, and safety measures Evaluate performance, give guidance and discipline as necessary to promote quality products Visually inspect, select and use only the freshest fruits, vegetables, meats, fish, fowl and other food products of the highest standard in the preparation of all menu items Read and employ math skills for following recipes Prepare requisitions for supplies and food items for production in workstation Schedule culinary staff so that proper coverage is maintained while keeping payroll costs in line Monitor to ensure proper receiving, storage (including temperature setting) and rotation of food products so as to comply with Health Department regulations, including coverage, labeling, dating and placing items in proper container of kitchen and service Observe production flow and make adjustments in order to adhere to control procedures for cost and quality Education High school or equivalent education required. Culinary school graduate preferred. Experience Two years hotel culinary or related experience required.
