Reports to: Food and Beverage Directly Supervises: Host/Hostess Staff Education and/or Experience High School education or equivalent. Previous fine dining and/or banquet experience. Minimum two years of experience as a Maitre'd, Lead Host, Dining room supervisor in a upscale dining venue. Wine list Liquor list and specialty drinks Restaurant Floor plans Reservation system POS (Jonas) System Job Summary (Essential Functions) Manage front door operations, organizing member reservations, seatings and special requests. Supervise and train Host staff. Maintain order and cleanliness and ensure that member satisfaction standards are consistently attained. Job Tasks/Duties Greets members and guests. Anticipate needs of scheduled special parties. Communicate seating needs to service, bus and other host staff. Complete all side work when and as assigned. Master the restaurant's computer register system. Orchestrate seating timeline and table placement from reservation list. Manage the incoming reservations for 3 adjoining dining rooms. Create and apply standard operating procedures for the position. Train and educate host staff in standing operating procedures for Host position. Think quickly to find solutions on a daily basis. Good organizational and follow-through skills. Knowledge of and ability to perform required role during emergency situations. Suggests and describes available appetizers, entrees, desserts, alcoholic beverages and wines to members and guests when asked. Coordinates food service between kitchen and service staff for special requests, or where elevated service can be achieved by doing so. Inspects dining rooms daily prior to each meal period for consistency to the designed floor plan and for table appearance, organization, and cleanliness. Resolves member and guest complaints and provides feedback to the F&B Director & Clubhouse Manager. Assures that all safety, accident and emergency policies and procedures are in place and consistently followed. Assures that revenue control procedures are continually followed. Selects, trains, schedules, supervises and evaluates Host staff. Inspects dining room to ensure proper maintenance, cleanliness and safety. Provides layout and design recommendations to applicable managers. Suggests decorations for special themes for dining rooms. Assures that pre-opening and closing cleaning tasks are assigned and completed as required. Manages the guest reservation system and a waiting list, if necessary. Assists with service of food and beverages in outlets and for special functions when needed. Assists with table clearing and re-setting as needed. Suggests when additional service supplies and small equipment are needed, Enforces established rules, regulations and policies. May serve as club's opening or closing manager or manager on duty. Suggestively sells daily specials to all members and guests. Assists in conducting pre-service employee briefings (line-up meetings). Coordinates any special requests including dietary needs with the Executive Chef, requests for seating, specific service staff or special linen with the F&B Director. Completes other appropriate assignments made by the F&B Director. Licenses and Special Requirements Food safety management certification. Alcoholic beverage certification. Of legal age to serve alcoholic beverages. Physical Demands and Work Environment Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch and twist or reach. Push, pull or lift up to 50 pounds. Continuous repetitive motions. Work in hot, humid and noisy environment.
