A DAY IN THE LIFE OF A SEAFOOD BUTCHER A Seafood Butcher is responsible for hands-on ordering, rotation, butchery, fabrication, and maintaining HACCP standards for BBCulinary seafood fabrication. As a Seafood Butcher, you will work in partnership with the Restaurant and Banquet Chef to determine production and par stock needs, as well as the Purchasing Manager to ensure proper stock levels. Examples of production items include the butchery of flat and round fishes, and the fabrication of shellfish (oysters, clams, mussels, lobster, cephalopods, etc.)Bonita Bay Club culinary team members are highly encouraged to post pictures to social media platforms of plated entrees, large banquets, ice displays, or anything that you're proud of producing with our team #bbculinary! QUALIFICATIONS FOR A SEAFOOD BUTCHER Minimum of 2 years of fabrication or culinary experience required Must be able to work varied hours depending on production needs Must have excellent interpersonal skills and a positive, professional demeanor Must be self-motivated and able to work independently to satisfy member's requests Must possess great attention to detail and a desire to implement cutting-edge industry techniques Must maintain Serve Safe Manager Certification Must be able to read, write and communicate proficiently in English.
