PURPOSE OF POSITION This position is one role in a large system of services provided to children and families. A strong food service program is important to support the program's goals. This position is responsible for ordering, preparing, serving, and documenting meals and snacks. It includes following menus and all phases of kitchen operations, including inventory control. The position contributes to the smooth operations and functioning of the kitchen in adherence to health and food safety codes and the strict cleanliness of the kitchen and food service and storage areas. The position may prepare foods for infants, toddlers, and/or preschool children following USDA/CACFP standards. The position may involve reassignment to various kitchens/centers as deemed necessary for program operations.This position is responsible for ensuring that bulk food and prepared food is delivered to all centers safely and on time. The position may also be responsible for delivering non-food supplies and inter-office mail. Role and Responsibilities The duties of the position are described in the major functional areas listed below. Additional duties may be assigned. EXAMPLES OF SPECIFIC DUTIES-- ESSENTIAL JOB FUNCTIONS Food Service · Prepares and serves food and assists in any food-related activities as directed and menus approved by a registered dietitian/nutritionist, including preparing food to meet the needs of children with special needs or disabilities. · Oversees inventory maintenance for all necessary supplies, food, and equipment for food services operations. · Oversees the processing and storage of food and food-related items as they are delivered. · Oversees entire kitchen operations and may supervise additional staff or volunteer assistance (depending on size and scope of workload). · Implements a cost-effective food service program according to federal, state, and local regulations that are a financially successful operation by helping to control food and labor costs. · Prepares and serves all meals as planned, paying attention to food presentation and freshness. · Ensures that standardized recipes are followed, and appropriate quantities of food are prepared and served in accordance with the CACFP meal requirements. · Monitors the acceptance of menu items by children in the program and recommends menu changes accordingly. · Solicits menu ideas from Early Head Start families to ensure that the menu reflects local culture and those menu items are familiar to children and offers new foods for children and families to try. · Acts as a resource and a team member with program staff to plan food-related experiences and presented in a manner that facilitates family-style meal services for children and classroom staff in an Early Head Start classroom and individual needs are met for infants and toddlers. · Ensures that dishes are returned to the kitchen. · Supports staff and parents in preparing meals and snacks for meetings, planning sessions, and other special events as requested and approved by the Health Service Coordinator or Program Director. · Ensures dishes and equipment are cleaned and stored for the next meal. · Responsible for proper receiving, inventory, food storage, and kitchen and equipment clean-up. · Notifies the supervisor of any safety or health issues or concerns. b. Health and Sanitation · Ensures that there is an established system for cleaning the kitchen and storage rooms so that they are always kept clean and sanitary. · Reports any kitchen equipment not in good working order to the Early Head Start supervisor to ensure the kitchen remains safe and hazard free and follows through on maintenance, repair, and replacement procedures. · Ensures that all foods are prepared in a safe and sanitary manner. · Responsible for complying with all local, state, and federal standards regarding hygiene and sanitation. c. Recordkeeping · Responsible for the period purchasing and regular maintenance of food to ensure quality, cost control, and adequate inventory. Receives and accounts for food deliveries. · Documents in the menu book, following required USDA/CACFP documentation, food purchased, prepared, and served. · Completes a weekly inventory of all food, both perishable and non-perishable. Ensures that inventory is secure. · Completes equipment and supplies inventory regularly. · Submits food invoices in an organized fashion promptly. · Maintains and submits records as required. · Participates in internal and external audits and performance improvement activities. · Ensure the kitchen has a proper Food Permit as applicable local regulations require. · Organize and document all receipts for purchases related to food/kitchen. d. Child and Adult Care Food Program · Contributes to the collection and editing processes of correct documentation for the Child and Adult Care Food Program (CACFP). · Be knowledgeable about CACFP requirements regarding portions and components of each meal service. · Conduct point-of-service meal documentation or assign responsible staff to count meals when children are seated and have been offered a credible meal by USDA standards for portions and components. · Edit and check CACFP records twice for accuracy and integrity before submitting them to the Health Service Coordinator for additional edit checking. e. Supervision and Training · Plans and directs the work of assigned staff (where applicable) and any volunteers working in the food service area. · Provides information and training on the job standards of the kitchen and submit employee/volunteer performance appraisals promptly. · Determines appropriate training needs for self and other kitchen staff/volunteers to meet the program goals and objectives and develop a professional development plan for all staff supervised. · Participates in ongoing training in food preparation and nutrition. f. Transportation of Food · Provides packaging and distribution of all Early Head Start meals based on safe and healthy food transport guidelines and Head Start Performance Standards. · Transports bulk food and prepared food safely to Early Head Start centers in warming containers and coolers for maintaining safe temperatures. Track's temperature of food taken from the centralized area and at the receiving site and informs the local site if food needs to be brought up to temperature (when transporting prepared foods). · Assists in maintaining any kitchen equipment used in the transportation of food in an organized, sanitary, and safe condition and initiates requests for repair or replacement. · Provide Transportation in personal vehicle for food delivery. 2. EXAMPLES OF GENERAL JOB DUTIES--ESSENTIAL JOB FUNCTIONS · Responsible for understanding Head Start Performance Standards, Department of Health Sanitation regulations, and local child care licensing regulations. · Expected to be knowledgeable of the regulations associated with preventing occupational disease and injury, including the exercise of universal precautions and the prevention of contamination. · Maintains strict confidentiality concerning Early Head Start children, families, and staff in accordance with established policies and procedures. · Become thoroughly familiar with Children's Coalition for Northeast Louisiana Head Start Employee Handbook, Human Resources Policies and Procedures, Children's Coalition for Northeast Louisiana Head Start Operations Manual, and all other Children's Coalition for Northeast Louisiana HS handbooks, manuals, and resources and adhere to them.Performs Other Duties as Assigned by Supervisor Education and Experience · This is an entry-level position requiring a high school diploma or GED. The minimum requirement is that the individual be 18 years of age, has food preparation experience, and can comply with any state food permit/health requirements. Experience in quantity food preparation and inventory control is preferred. Previous Early Head Start experience preferred. · Knowledge of food preparation and storage techniques. · Knowledge of basic operations of vehicles and safe delivery of prepared food items. Thorough knowledge of USDA/CACFP program requirements and Head Start Performance Standards related to food and nutrition. Knowledge of the local, state, and federal sanitation and food service regulations. · Knowledge of regulations associated with preventing occupational disease and injury, including the exercise of universal precautions and the prevention of contamination. · Some knowledge of basic supervision. · Ability to organize and direct all kitchen activities. · Ability to prepare healthy and attractive meals and snacks and to maintain the kitchen, storage, and food service areas in a safe and healthy condition. · Ability to take direction and prepare meals according to menus and guidance provided and in cooperation with a registered dietitian/nutritionist who approves menus. · Ability to be flexible in food preparation and other food-related activities. · Ability to organize time efficiently and accept responsibility with limited supervision. · Ability to maintain confidentiality about any information regarding families and staff. · Ability to work with a registered dietitian/nutritionist for menu approval and periodic adaptations. · Ability to operate light trucks or vans for food delivery. · Ability to work independently with minimum supervision. · Ability to use the computer for data entry functions. Ability to add, subtract, multiply, and divide with simple fractions. · Requirements for employment with Children's Coalition for Northeast Louisiana Head Start may differ from those required by the former grantee or a replacement grantee. Acceptable tuberculosis screening results, a clear criminal records check (including a child abuse registry check if required by state regulations), and an initial health exam are required post-job offer and before employment. To drive agency vehicles (if applicable), one must have a valid driver's license, be insurable by the Children's Coalition for Northeast Louisiana Head Start insurance carrier, and have a Motor Vehicle Record acceptable to Children's Coalition for Northeast Louisiana Head Start. Current and former Early Head Start parents will receive preference for employment vacancies for which they are qualified. · Must have reliable transportation and, if/when using own vehicle, must have minimum automobile coverage required by state of employment. Physical Demands and Working Conditions Some heavy lifting of case food lots is required. May be required to lift up to 40 pounds. Most kitchen work is completed in a standing position with a large percentage of time spent working with hot stoves, ovens, dishwasher, and other kitchen appliances. Travel by car, bus, airplane, or train may also be required associated with attending conferences, meetings, and other duties carried out at distant locations in and out of state and in some cases where some overnight travel may be required. Some exposure to communicable diseases and food-borne illnesses. The noise level in the work environment may be moderate to loud. Some evenings and weekend work may occasionally be required for events such as parent-teacher conferences and Parent Committee meetings, social and community events.
