Thorny Lea Golf Club is looking for an experienced, hands on chef to lead culinary operation, that includes function, member dining and snack bar outlets. The successful candidate must have the ability to satisfy member expectations while operating within budgetary guidelines. Responsibilities include train and supervise staff, ensure that high standards of sanitation and cleanliness are maintained, plans menus, with manager,evaluates food products to ensure that quality standards are being met, inventory controls and sheduling. Previous private club experience at either the executive chef or sous chef level a plus. The ideal candidate will have a quality, 4 - 5 star restaurant and or 4- 5 star hotel background in a full-service, fining dining restaurant or in Food and Beverage facilitywith some amount ofbanquets. At least, 4 - 6 years experience as an Executive Chef with distinctive cuisines and extremely strong cost controls and labor controls. Volume approximately 2 - 3 million plus. It is helpful, in this position to have trained under a chef of notoriety. Culinary degree is preferred, but not required. Strong hands-on experience and the ability to delegate is critical to success. This is a fast-paced operation and the pressure to maintain high standards and quality is of zenith import. The individuals should have a background familiar with meats, fish, from scratch cooking and specialty items.
