BASIC FUNCTION (the primary purpose of this position): This position manages the Timbers Caf and is a member of the Food & Beverage management team. PRINCIPAL ACTIVITIES & RESPONSIBILITIES: Promote a clean, safe, healthy and friendly work environment for employees and guests; report and direct safety issues to Safety Committee. Hire and schedule personnel in both front and back of the house positions based on production and service requirements for flex and budget expectations. Insure all new hires complete Hooked on Service and departmental new hire orientation. Insures that staff has been trained to department training standards and have signed off on training. Maintain time and attendance records and approve all adjustments. Provide direction to staff in all areas of employee relations, which includes compliance to established policies and procedures and maintenance of positive moral levels within the workplace. Interact with all food department employees to achieve prescribed cost control measures and production levels. Assist Executive Chef in the creation of menus and costing of all products in the Timbers Caf and W101. Assure that food items produced meet quality specifications. Write and keep updated all specifications for the Timbers menu. Effectively Manage inventories for the department and conduct inventories based on departmental schedule complete with value extension. Order and track supplies assuring par levels are met Insures department check book and general ledger are accurate and up to date for month end close. Responsible for assuring that Million $ Service standards are incorporated into daily operations. Responsible for following up on maintenance and cleanliness of all Timbers equipment, storage and service areas, assuring company sanitation and safety standards are met. Circulates throughout the Timber's area providing instructions, motivating employees to complete their work assignments in a timely manner. Handles guest service concerns and makes recommendations to improve guest service or caf operations. Other duties as assigned. POSITION REQUIREMENTS (objective educational or technical training required; skills; and years of experience): One year progressive exposure to commercial kitchen environment. Five years related food management experience with demonstrated strengths in attention to detail, organization, execution, time management, guest and employee relations.. Must be 21 years of age. Must have supervised at a minimum a staff of ten people for one year. Demonstrated ability to work with a minimum of supervision. Must be able to follow written instructions. Demonstrate an aptitude for cooking and an understanding of production cooking Ability to understand forecasting and labor controls. Computer experience to include Word, Excel and Micros. Must hold and keep current either a Food handlers card or a ServSafe Certification. ServeSafe certification required or must have the ability to become certified within 90 days of employment. Must pass and keep current an OLCC permit. Must pass and remain in compliance with Coquille Gaming Commission background check and drug free work place policies PHYSICAL DEMANDS/WORK ENVIRONMENT ( the physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this position. While performing duties of this position, employee is required to stand for extended periods, and frequently walk, and use hands to; finger, handle, or feel objects, tools, or controls. Ability to lift up to 50 lbs. frequently. Occasionally sit. Ability to manage stress appropriately, make decisions under pressure, manage anger, fear, hostility and violence of others appropriately. The casino work environment may expose you to second hand smoke on a regular basis.
